We all understand that there are levels to the pursuit of a healthy lifestyle. It’s not enough to just run the neighborhood each morning, strength training is also required to build muscle, burn fat, and become stronger. But once we sweat it out, we can’t stop at Burger King to refuel, we have to make smart eating choices to complement all of the work our body has endured.
Healthy eating is a constant struggle. There is a Mc’Donalds on every corner and a Chick-Fil-A right across the street deceiving us with their waffle fries and wheat sandwich buns. On that note, there are so many brands that use the fitness trend to promote foods that if you read the labels, are not as healthy as they seem. A product may be low in calories but if high in sugar and sodium, it is not any better for our bodies.
What is exciting about the fitness movement is that there are plenty of healthy foods with pleasurable tastes and affordable costs. My favorite meal right now is a simple sandwich that consists of grape tomatoes, avocado, spinach and olive oil. First of all, let me say that I have just been introduced to grape and cherry tomatoes and the greatness that they contain. They taste even better than traditional tomatoes, packed with flavor and a sweetness that substitutes the need for seasoning or sodium-packed dressings. Pair them with a green veggie and you have a yummy snack that you won’t later regret.

Tomato, Spinach & Avocado on Whole Wheat
2 slices 100% whole wheat bread
1/2 cup sliced grape tomatoes
1/2 cup spinach
1/2 sliced avocado
2 tablespoons 100% extra virgin olive oil
1 teaspoon of garlic powder if desired for taste
- Pour olive oil in saucepan on medium heat. Add tomatoes and spinach stirring occasionally until softened.
- Toast bread slices.
- Place tomatoes and spinach on one slice.
- Add avocado and top with second bread slice.
